Tomato Quiche
Ingredients
10 inch pie shell
2 cups sliced tomatoes
1/2 tsp basil
1 tsp salt
1/8 tsp pepper
1/2 tsp sugar
4 scallions, chopped
1/2 cup grated swiss cheese
1/2 cup grated cheddar cheese
2 eggs, slightly beaten
2 Tbs flour
1 cup evaporated milk
Procedure

Preheat over to 375 degrees.
- Prepare the pie shell, bake 10 minutes.
- Cool shell slightly, then place chopped tomatoes in shell. Sprinkle with basil, salt, pepper, sugar and scallions. Spread the cheddar and swiss cheeses over the tomatoes.
- Combine the eggs, flour and evaporated milk. Pour over cheese and tomatoes. Bake for 40-45 minutes or until set. Cool five minutes before serving.
