Tomato Quiche

Ingredients

10 inch pie shell
2 cups sliced tomatoes
1/2 tsp basil
1 tsp salt
1/8 tsp pepper
1/2 tsp sugar
4 scallions, chopped
1/2 cup grated swiss cheese
1/2 cup grated cheddar cheese
2 eggs, slightly beaten
2 Tbs flour
1 cup evaporated milk

Procedure

  1. Preheat over to 375 degrees.
  2. Prepare the pie shell, bake 10 minutes.
  3. Cool shell slightly, then place chopped tomatoes in shell. Sprinkle with basil, salt, pepper, sugar and scallions. Spread the cheddar and swiss cheeses over the tomatoes.
  4. Combine the eggs, flour and evaporated milk. Pour over cheese and tomatoes. Bake for 40-45 minutes or until set. Cool five minutes before serving.

Serves 6. Per Serving: Calories 257; Calories from fat 120(47%); Fat 14g; Carbohydrates 21g; Sugar 2g; Fiber 1g; Protein 13g
