Healthy Pregnancy Cookbook

Taco Casserole

Ingredients

2 lbs ground beef
1 onion, diced
1 quart stewed tomatoes
1/2 cup chopped green chilies
1 pkg. taco seasoning
1 pkg. large flour tortilla shells
1 1/2 lbs shredded cheddar cheese

Procedure

  1. Brown ground beef and onion; drain. Add rest of ingredients except cheese and tortilla shells.
  2. Cut tortilla shells in half. In a 9x13 greased pan, layer tortilla shells, meat mixture and cheese, repeating 2 more times ending with cheese.
  3. Bake at 350 degrees for 20 minutes.

Serves 8. Per Serving: Calories 656; Calories from fat 309(47%); Fat 34g; Carbohydrates 39g; Sugar 1g; Fiber 1g; Protein 47g
