Spinach Rice Casserole

Ingredients

1 cup chopped onion
2 cloves minced garlic
3 Tbs butter or margarine
2 lbs fresh, chopped spinach
4 egg, beaten
4 cups cooked brown or white rice
1 cup low fat milk
1 1/2 cup cheese, shredded
2 Tbs soy sauce

Procedure

  1. Saute onions and garlic in butter or margarine over medium heat. When onions are soft, add spinach. Cook 2 minutes.
  2. Combine all ingredients and mix well. Spread into a well greased casserole dish and cover.
  3. Bake at 350 for 35 minutes.

Serves 6. Per Serving: Calories 377; Calories from fat 124(33%); Fat 14g; Carbohydrates 42g; Sugar 5g; Fiber 6g; Protein 23g
