Sweet Hot Fun See Chicken

Ingredients

1 lb skinless boneless chicken
1 tsp cornstarch
1/4 cup water
2 Tbs cornstarch
1/2 cup sugar
1/2 cup chicken broth
1/3 cup + 1 T rice vinegar
1 tsp soy sauce
1 tsp chile puree
1 clove garlic, chopped
4 cup shredded cabbage (or cole slaw mix)
2 oz rice noodles
1 tsp vegetable oil
2 Tbs sesame seeds

Procedure

  1. Cut chicken into 2x1/2 inch strips. Toss chicken and 1 t cornstarch, let stand 10 minutes.
  2. Mix water and 2 T cornstarch, set aside.
  3. heat sugar, broth, rice vinegar, soy sauce, chiles puree and garlic to boiling in 1 qt saucepan, stirring occasionally. Stir in water-cornstarch mixture. Cook and stir about 1 minute or until thickened; remove from head and keep warm.
  4. Place cabbage and noodles in a large bowl. Cover with boiling water. Let stand no more than 5 minutes, place drained mixture on heated platter.
  5. Stir fry chicken in oil; place on top of noodles and cabbage. Heat sauce to boil, pour over chicken and noodle mixture. Sprinkle with sesame seeds.

Serves 4. Per Serving: Calories 204; Calories from fat 26(13%); Fat 3g; Carbohydrates 46g; Sugar 25g; Fiber 3g; Protein 6g
