Roasted Herb Potatoes

Ingredients

vegetable cooking spray
1 lb potatoes, 3 C cubed
2 tsp vegetable oil
1/2 tsp rosemary
1/2 tsp salt

Procedure

  1. Preheat oven to 450. Coat baking sheet with vegetable cooking spray.
  2. Wash and peel potatoes. Cut into 1/2 inch cubes and place in large bowl.
  3. Combine oil, rosemary, and salt. Pour mixture over potatoes, stirring to coat evenly.
  4. Spread potatoes on baking sheet.
  5. Bake 25 to 30 minutes, or until lightly browned.

Serves 4. Per Serving: Calories 112; Calories from fat 25(23%); Fat 8g; Carbohydrates 20g; Sugar 1g; Fiber 3g; Protein 2g
