Mou Shu Pork

Ingredients

6 dried black mushrooms
8 oz sliced bamboo shoots
1/2 lb diagonally cut pork loin
1 tsp cornstarch
1 tsp soy sauce
1/2 tsp salt
1/2 tsp sugar
1/8 tsp white pepper
2 eggs, beaten
1/8 tsp white pepper
1 tsp vegetable oil
1/2 cup shredded chinese cabbage
2 cloves garlic, finely chopped
1 tsp soy sauce
2 green onions, chopped
8 tsp hoisin sauce
4 flour tortillas or chinese pancakes

Procedure

  1. Mix cornstarch, with tsp soy sauce, salt, sugar and 1/8 tsp white pepper. Stir in pork, let stand 10 minutes. Cook egg and pepper in wok, cool slightly, cut into thin strips.
  2. Stir fry pork about 2 minutes, or until no longer pink in center. Add mushrooms, bamboo shoots, cabbage, garlic, 1 tsp soy sauce and green onions. Stir fry 1 minute. Gently stir in egg strips.
  3. Brush 1 tsp hoisin sauce on a tortilla or Chinese pancake. Spoon 1/4 C pork mixture onto center of pancake. Fold and serve.

Serves 4. Per Serving: Calories 279; Calories from fat 75(27%); Fat 8g; Carbohydrates 30g; Sugar 4g; Fiber 3g; Protein 21g
