Sauteed Greens

Ingredients

1 lb greens
1 tbs olive oil
dash salt and pepper

Procedure

  1. Thoroughly wash and coarsely chop the greens. Remove any thick ribs and the stems.
  2. Heat a large skillet over medium-low heat. Sauté the greens in olive oil, adding them by handfuls and stirring as they wilt. You can add ½ cup of water if the greens seem dry.
  3. Cover the skillet and let them cook slowly over low heat for 5 to 15 minutes, (depending on the type of greens) until tender but still green.
  4. Add salt and pepper to taste.

Serves 8. Per Serving: Calories 145; Calories from fat 50(34%); Fat 6g; Carbohydrates 7g; Sugar 2g; Fiber 2g; Protein 17g
