Cheese Blintzes

Ingredients

3 eggs, room temperature
1 cup milk
1 tsp vanilla
2 Tbs honey
1 Tbs corn oil
1/4 tsp salt
1 tsp baking powder
3/4 cup whole-wheat flour
Cooking Spray
Filling 1 1/2 cup cottage cheese (small curd)
2 eggs
3 Tbs orange juice concentrate
1/4 tsp salt
2 Tbs honey
1/2 tsp cinnamon

Procedure

  1. Beat eggs lightly in a bowl. Ad milk, vanilla, honey and oil.
  2. Sift salt, baking powder and flour into liquid mixture and stir just until flour lumps dissolve.
  3. Drop by tablespoon onto a 6-inch hot skillet or crepe pan spryed with cooking spray, and tilt pan so that batter spreads evenly over the bottom. Cook over medium heat until light brown, then turn and cook briefly on other side jsut to dry surface. Stack blintzes until ready for filling.
  4. Preheat oven to 425 F.
  5. Blend all filling ingredients thoroughly in a bowl. Place 2 tablespoons of filling in center of the darker side of each blintz. Roll into tube shape and turn ends under to seal.
  6. Arrange filled blintzes in a single layer in a buttered glass baking dish, brush tops with melted butter. Bake for 15 minutes, or until golden brown. Serve hot, with sour cream.
