Healthy Pregnancy Cookbook

Beef and Broccoli

Ingredients

1 Tbs vegetable oil
3/4 lb thin beef strips
2 cups fresh broccoli florets
1 (.87 ounce) package Brown Gravy Mix
1 cup water
1/4 tsp Black Pepper

Procedure

  1. In a large skillet, heat oil over medium-high heat. Add beef strips; saute 3-4 minutes; add in broccoli.
  2. Combine Gravy Mix, water and black pepper. Pour over beef mixture. Stir and bring to a boil. Cover and simmer 5-8 minutes or until broccoli is tender.
  3. Optional: Add 1/4 teaspoon Ground Ginger and 1 cup sliced fresh mushrooms.

Serves 4. Per Serving: Calories 583; Calories from fat 188(32%); Fat 21g; Carbohydrates 70g; Sugar 10.5g; Fiber 3.6g; Protein 29g
