Basic menu with suggestions for those who don't like to cook.

Breakfast
Cheese Blintzes
Whole Wheat or Bran Muffin
8 oz Glass of Milk (8oz = 1 Cup)

Snack
Cut Vegetables with Hummus for Dipping

Lunch
Chicken And Corn Chili
Applesauce Cornbread

Snack
Salad made with 1 hard boiled egg and 2 oz cheese

Dinner
Peking Fish
Rice
Steamed Asparagus

Snack
Strawberry Shortcake

Making this menu work for you

If you do not like cooking, or don't have the time, try these menu changes:

  • You can find cheese blintzes in your grocer freezer section.
  • Purchase muffins from your local bakery and keep them in the freezer until ready to eat. Pay attention to serving size, many bakery muffins are two or more servings each.
  • Several companies make mixes for cornbread, you can find them in the baking section of your grocery store. Cornbread can be made ahead and stored in an airtight container for 2 or 3 days.
  • Substitute a can of chicken and rice soup for the chicken corn chili. Be sure to read the labels to make sure the soup you get doesn't contain excess fat and salt.
  • Cooking Peking Fish may take advanced cooking skills. An alternative would be to grill a fish fillet or steak.
  • Instead of making the cake for strawberry shortcake, purchase an Angel Food Cake at the supermarket. Give half the cake to a friend so you will not be tempted to over-eat (resulting in heartburn and indigestion.)
